Pumpkin Alfredo Pasta

 I tried a new Pasta idea... 

are you ready?



Pumpkin Alfredo Pasta

  • *12 oz pasta ( I used Gluten free Barilla Pasta)
  • *1 Cup Pumpkin Puree ( from my Pumpkins!! - and it was FRESH - I made it that morning)
  • *1 Cup Cream
  • *1/2 cup parmesan
Cook the pasta according to the package

In a pan - Stir the Pumpkin and Cream, I cooked just to a boil - stirring it over medium heat until that boil started.  Then !! 

Tossed in the Parmesan cheese to melt in the mix - and poured it over the pasta!!



Ta da!!!  it was yummy and of course, I ate it as is, my guys added a steak to the side

Fun Four Patch QOV and!! Finished!! ( or not) Friday

We are at less than Two Weeks until Christmas!!! we don't do a lot of Christmas Baking, cuz we will just eat it all - but!!! This weekend... I think we will be making my family Fried Cakes ( they are donuts - but they are called Fried cakes for some reason)

I got this Fun Four Patch quilt quilted this week.




i think this one turned out pretty great - it is off to be bound - and then.... to a Veteran!! Yay!! I like working on group projects like this.

Ouray, Grand Junction and then home....

 it was time to take a little walking tour of Ouray. Check out the street.... the photo is level!!!

This is the Ouray County Courthouse - What a setting right? 




This is the Wright Opera House. I found it so cool that all these little towns have opera houses. When we went to Leadville we saw the Tabor Opera House. Can you imagine the sophistication back in the 1800's to attend an opera?  

The Wright was built around 1881 and was built to *Offset the influence of the Dance halls, Saloons, andGambling Dens"



This ( above ) is the Beaumont. There is a mine by that name too. and at one time this place was painted bright pink. it was built in 1886 and in its hey day - Theodore Roosevelt Stayed there. It is open today - well - it was closed for Thanksgiving - but it is open as a hotel today. 

I think that would be fun to stay there next time. 



We then headed north to Grand Junction. We decided to take the interstate home - so had to get to it!!
This is a car that was parked by the store we went to:



Some of my Kids went to college in Grand Junction - so early on we became a fan of this place!!

Gelato Junction!!!! I had Chocolate and Toasted Marshmellow and it was sooooo yummy!!!


We also hit the Loki Store. Loki is one of our most favorite brand of jackets - they have built in gloves and face masks , venting systems and draw cords too. They are the best for hiking, and then I got one this time in a heavier canvas for chores and ranch work... but!! I got Purple... I love it!  (I don't have to save it for chores!!)

Saying goodbye.... and heading home.



We got home in the dark, but woke  up to this!!!
And finding out the Roads we had just come over one were snowy, ice packed, and full of accidents. The canyon we drove thru had a 50 car pileup, and car had gone over the side on the Million Dollar Highway..

I would like to say that I timed it perfectly and knew what was going to happen... but I didn't - it just worked out so well for us!

The Million Dollar Highway... to Silverton

 the next day was a nice dry but cold day so we attempted the Million Dollar Highway from Ouray to Silverton.

There are NO guardrails.

There a Lot of Steep downhills to see from the passenger seat.

I might have screamed once ( or twice)

You can google more about it  - but the sign said in 1883 it cost $10K per mile to build it - so that is one of the reasons it got its name... Oh my!

They also call this area the Switzerland of of America - Its quite beautiful!!


K grew up listening to this song called Black Bear Road by CW McCall - so we had to find the road... and then we had to play the song - we all laughed ...

This was the road....



My son drove, K held on the Hand holds, i took photos....

 You can see the road to the left of the photo... No Guard Rails you all... None...


We found a lot of old abandoned mines... The Idarado Mining company is restoring some of them - I hope that means you can tour then at some time ;-)

WE made it over to Silverton - what a cute little town.
The main road is very Old Timey - I think we got there a little late in the season, not a lot was open.





And then we had to drive back. K was much more relaxed as he was on the Mountain Side.... so he couldn't see the drop offs as easy.../




On the way back we stopped at this Box Canyon - it was really cool. Ouray is known for ice climbing, so they had water spraying to help create ice for the Ice climbers, but while they are waiting for the ice to grow - you could hike into the box Canyon... it was super cool. ( and really cool... cold in fact!)


There is still some mining equipment in the river that has been abandoned. I think it was also to original location of the hot springs, but now the water is piped out to the Hot springs in town.

It was a nice sightseeing trip. I was surprised tho - the other two days there were almost no people in town. This time when we got back, the restaurants had waiting lines... so we went to the Saloon!

The Full Tilt Saloon - it was a cool little joint. We walked in and were 3 of the 6 people in the joint.... got our food, and by the time it had arrived.... the place was full. With One Waiter - I felt so bad for him, but he did a great job.. and we were full!!

A QOV is quilted... and !! Finished ( or not) Friday!

Oohh I am expecting a lot of Finishes around this time of year.. How about you???

Here is my finish... it is before the snow - so you can still see my green fake grass, which you can not see today!! (yay)



This is a cool one!! its really vintagey fabric - I don't think the fabric is vintage - its just the look of it. Its quite soft and cuddly



and then!! I got some more Bowl  and ice cream cozies done. These are for one of my family members. I was a little iffy about using the white, but it would fit their aesthetic so much more than a color....

Uncompaghre River ( I spell it as it sounds)

After our huge day of hiking - we decided we needed a leisurely hike to work out the kinks in our legs, and work up an appetite. Of course - we were doing a mini Thanksgiving dinner at the VRBO Later in the day. 

So we took the Uncompaghre River walk - I think it is about 3 miles, but we took a few detours to sight see.... so it made it about 4 miles for us.  PERFECT!!

Oh!! and QuiltingJetGirl - TONS of camp sites along the river ;-)

We could leave right from our house and get on the trail. It had about a 58 foot elevation change across the whole trail - that sounded very do-able.


My Hiking buddies. I love that they are so up for anything. We have a great time traveling together. 

They do stay happier when there is the promise of food later tho 😉


The mountain at the middle of the photo is Mt Ouray ( elev 13961ft)  .  Isn't is gorgeous? 


The trail was pretty cool, there was a little offshoot that took you to the Hot Springs. So realistically , we could have walked from our house to the Hot springs and soaked. We did not, it was $30 per person , and we wouldn't have stayed long enough to make it worth the $.

Plus - Hubby has stitches he couldn't get wet, and I don't do long periods of heat.



Ouray is very rich in Mining heritage. So we found little things all over - that showed you what equipment was used. 



I am going to preface this - I am starting to feel like my Grandpa when I make statements like this. 
I think people today have NO idea how to work as hard as these miners did. I think , somedays, my life is so rough, and then I come back to electricity, running water, and heat.... 


I took the photo above just to show me how far we hiked up the day before - that very top peak - we were about 100 feet below that on our hike. Crazy right??



At the Hot Springs there is the Terrapin Station. Rumor has it that in the olden days two alligators lived here, until there was a flood. Apparently one Alligator was never found...


Isn't that fish HUGE? 
He kept following me, I think he could see my shadow and thought I had food for him.

Then it was back to the house to cook dinner. We ham, Roasted Broccoli and Brussel Sprouts and Mashed Potatoes, Biscuits and Ice Cream!  Its a little strange cooking in a house you don't live in - the utensils might be spotty - but I think we did okay. We were all stuffed!




oh!! PS - we brought most of our food with us. I didn't know what size grocery store Ouray might have ( population 800) but it had a nice one. They had locally raised steak and condiments - but I was very glad to have brought my veggies etc.
